Since the water from the espresso machine is under pressure, the espresso pellet must be compressed and evenly tamped. The water jet will always flow from an area of high pressure to an area of low pressure. It is therefore important to prevent low resistance paths in the coffee pellet and force the water to penetrate evenly and extract the coffee essence.
