All KNOCK-CONVEX base parts have a slightly outwardly curved surface for pressing the espresso and are made of solid stainless steel on a CNC lathe. Similar to the American Curve, the difference between the center and the outer edge is 1.5mm.
Why the term Knock?
After the first tap of the espresso, tap lightly on the side of the portafilter. "knock", which causes all the espresso powder on the side of the edge to fall into the portafilter. Then tamping takes place again. So that the tamper base does not have to be used for this light blow on the portafilter, which could lead to damage to the soft portafilter, or even the wooden handle, you can now use the silicone ring incorporated into the base. We have protected this invention legally.
Why Convex?
Normally, the surface of the espresso tapped in the portafilter does not play a significant role; Whether flat (plan) or convex (curved), there is enough space between the espresso surface and the shower sieve so that the water can be evenly distributed over the espresso and the espresso powder can penetrate evenly. However, if flat sieves are used or significantly more than 7g (1-cup sieve) or 14g (2-cup sieve) are used, it may happen that there is not enough space between the espresso powder and the shower sieve for optimal brewing water distribution. For this purpose, a Tamper Base Convex can be used, which leaves a depression in the middle for better water distribution.
